This delightful nano lot is produced by our friend Liz Escobar and her family in their small farm in the Andes mountain rage, Nariño, Colombia.
At the astounding altitude of above 2000 masl and with volcanic soil, their coffees impart a unique and intense flavour profile. Due to the altitude of the farm and the difficult access to it (as the last kms to the farm have to be made by foot) there is no technology available and all processing is very manual and controlled.
During harvesting, the ripest cherries are picked, so that at least 97 % of the cherries are very ripe. A second selection is made to ensure that no negatively affected cherries make it into processing.
The baskets in which the coffee is collected, carry inoculated bags to avoid external contamination. From the collection bags, the cherries are then transferred directly to Grain Pro bags to conserve properties and sugars and to avoid contamination.
This lot is then fermented for 22 hours in cherry, and then pulped and washed 24 hours later - just the right processing for it.
