This is our second year sourcing coffee from the Chacón family and we aim for a continuous collaboration over many years – their coffee is truly great.
This very special lot is Typical Lima variety. The Typica variety is originally from Ethiopia, however the Typica Lima variety was a selection that was made in the country from the Typica variety at CATIE (Centro Agronómico Tropical de Incestigacion y Enseñanza).
After several tests, they selected and developed it to what is known as Typica Lima. Thanks to this institution, the variety was brought to the Central Valley and distributed to several growers in the area including Las Lajas.
The Las Lajas micro mill is a renowned coffee processing facility located in the Sabanilla de Alajuela region of Costa Rica. It is recognized for producing high-quality specialty coffee using organic and sustainable methods. The micro mill is owned and operated by the Chacón family, specifically Oscar and Francisca Chacón, who have gained international recognition for their innovative coffee processing techniques.
Las Lajas micro mill has become an absolute expert in honey, natural and experimental processing and it is impressive how customized Las Lajas coffees are.
