This micro-lot coffee showcases well the beauty of fermentation techniques in coffee processing. With a complex and vibrant fruitiness, Rosa Ramos and her family did a great job with this Caturra.
Rosa Ramos was born and has lived with coffee production her whole life, as her parents were also coffee-producers.
At the age of 18, Rosa met her future husband López Branada Antonio who later also became her partner in coffee production. Together they own La Colmena farm where they grow and process coffee with great quality, with focus on producing specialty coffee.
The change to the production of specialty coffee has allowed the family to achieve higher economical stability.
This coffee was carefully harvested between June and September 2022, where the cherries were selectively picked and then separated by density in a floating tank.
Then on, they were taken to a fermentation tank and dry-fermented for 24-36 hours.
After fermentation, the coffee was washed and taken to a solar dryer where it was dried for 10 – 15 days.
